I was tempted to do a leek and lamb stir-fry with hot thai spices wrapped in crispy pancakes. However, time precluded that and we had bacon butties followed by pancakes mmmm!

Hmm interesting idea.. (the first one I mean!)

I have here lamb and leeks.... I am doing Anglesey eggs tonight for tea (and home made Welsh cakes!) but may stick some lamb on Mikey's plate as well :-)

Welll they sounded good in theory but I am not convinced...

Basically mash up potatoes and leeks & stick in a dish, Make a well and fill with chopped hard-boiled eggs, cover with cheese sauce & then bake.

Mashing the leeks up was fun though - it makes green, fluffy mash!!!

Hmmm - interesting. Not sure about baking hard boiled eggs though. I would be tempted to line a bowl with the mix and then crack raw eggs into a well in the middle and then bake them like that. Something like eggs florentine
